Also called the combustion value. The amount of heat released when a substance is burned in the presence of sufficient oxygen. In the body, compared to the heat released when a substance is burned under high pressure oxygen, combustion is not complete and substances that contain some of their energy are excreted in feces and urine, so the heat of combustion of these substances is subtracted to determine the physiological fuel value of a food. 燃焼価ともいう.物質を酸素の十分存在する条件下で燃焼したときに発生する熱量.体内では,高圧酸素のもとで燃焼させたときに発生する熱に比べて,完全燃焼はせず,糞や尿に一部エネルギーをもつ物質が排泄されるので,それらの燃焼熱を差し引いて,食品の生理的燃焼熱 (physiological fuel value) を求める.
