Dairy products that are safe for people with lactose intolerance
○ Nutritional effects: It is produced during the tofu manufacturing process and there are three types: soy milk, adjusted soy milk, and soy milk beverage. Soy milk is made from soybeans and has a soy solids content (the amount of soybean components remaining after removing water from the product) of 8% or more. Adjusted soy milk has a soy solids content of 6% or more and is permitted to contain added vegetable oil, sugar, calcium, etc. Soy milk beverages contain 50% or more soy milk or adjusted soy milk , and are dairy products that can be safely consumed by people with lactose intolerance.
In terms of nutritional components, soy milk inherits the nutritional components of soybeans. It is rich in soy protein, soy oligosaccharides, isoflavones, and iron. Soy protein has the effect of lowering blood cholesterol levels, and isoflavones are known to have an effect of suppressing the development of cancer. In addition, oligosaccharides activate the intestinal bacteria bifidobacteria, which promotes a healthy intestinal environment and improves bowel movements.
However, soy milk has a strong soybean flavor, so it may be difficult for people who are not used to it to drink it. If you are drinking soy milk for the first time, it is best to start with adjusted soy milk or soy milk drinks. It is also recommended to use it in cooking such as soups, dressings, cakes, and jellies.

○栄養成分としての働き
 とうふの製造過程でできるもので、豆乳(とうにゅう)、調整豆乳、豆乳飲料の3種類があります。豆乳は、原材料がダイズ、ダイズ固形分(製品から水分を除いた残りのダイズ成分の量)が8%以上のものです。調整豆乳は、ダイズ固形分が6%以上、植物油、糖、カルシウムなどの添加が認められているものです。豆乳飲料は、豆乳または調整豆乳を50%以上含むもので、乳糖不耐(にゅうとうふたい)の人でも安心して飲める乳製品です。
 栄養成分でいえば、ダイズの栄養成分を引き継いでいるのは豆乳ということになります。ダイズたんぱく質、ダイズオリゴ糖、イソフラボン、鉄が豊富です。ダイズたんぱく質には血中コレステロール値を下げる働きがありますし、イソフラボンにはがん発生の抑制効果があることが認められています。また、オリゴ糖は腸内細菌であるビフィズス菌の働きを活性化するので、腸内環境を健康にし、便通をよくします。
 ただ、豆乳はダイズの味が濃厚なので、慣れない人には飲みにくいかもしれません。はじめて飲む人は、調整豆乳や豆乳飲料から試すといいでしょう。スープやドレッシング、ケーキ、ゼリーなど料理に利用してみるのもおすすめです。
