It is a general term for sweets, fruits, cheese, and coffee taken after the main meal. After a series of courses, from appetizers to soup, fish dishes, meat dishes, and salads, the tableware such as butter dishes, salt shakers, and pepper shakers are cleared away, and dessert is served as a sweet dish. The main dishes are not usually very sweet, but the dessert course should be sweet and have a moist texture.

Desserts are divided into hot (heated) and cold desserts. Hot desserts include puddings, soufflés, fritters, crepes, pies, and biscuits. Cold desserts include ice cream and sorbet, which melt naturally in the mouth, and fruits with a natural sour taste.

主食後にとる菓子、果物、チーズ、コーヒーを総称していう。前菜からスープ、魚料理、肉料理、サラダと一連のコースが終わったところで、バター皿、塩入れ、こしょう入れなどの食器類をかたづけ、改めて供される甘味料理がデザートである。主要料理はあまり甘いものは出されないが、デザートコースでは甘味をもち、口あたりのしっとりしたものがよい。

 デザートの種類としては温菓(加熱したもの)と冷菓とがある。温菓ではプディング、スフレ、フリッター、クレープ、パイ類、ビスケットなどが供される。冷菓としてはアイスクリームやシャーベットのように自然に口の中で溶ける氷菓類や、自然の酸味をもつ果物などが喜ばれる。
