This was rice lent to salt producers by the Kanazawa Domain between 1627 and 1871 (Kan'ei 4 and Meiji 4). Half of the planned production for the following year was lent at the end of the year, and the remaining half in February and April of the following year, with the producers being required to repay with the salt they produced. The salt exchange rate (salt to rice exchange rate) was 9.5 to 12 bales of salt for every koku of rice. The salt producers' production and livelihood were covered by this rice. If production exceeded the planned amount, they were lent additional salted rice. The domain's monopoly on salt was centered around this salted rice and the rental kettle system. 金沢藩が1627‐1871年(寛永4‐明治4)の間,塩師(しおじ)(塩生産者)に貸与した米。翌年の生産予定量に対し年末に半分,翌2,4月に残り半分を貸し出し,生産塩をもって返済させた。塩替(しおがえ)(塩と米との交換比率)は米1石に塩9.5~12俵であった。塩師の生産と生活はこの米によってまかなわれた。生産が予定量を超えると追塩手米を貸し出した。塩の藩営専売はこの塩手米と貸釜制度を軸とした。また塩手米仕法は藩の貢租米の市場としての意味もあった。
