Alginic acid - aruginsan (English spelling)

A mucus polysaccharide found between algae cells. Structurally, it is a type of polyuronic acid. Polyuronic acid refers to a combination of multiple uronic acids, and uronic acid is a general term for aldoses (sugars with aldehyde groups) in which the terminal carbon opposite the aldehyde group is a carboxyl group (-COOH). D-mannose (a type of aldose) with a carboxyl group at the 6th carbon is called D-mannuronic acid, and L-gulose (a type of aldose) with a carboxyl group at the 6th carbon is called L-guluronic acid. Like aldoses, uronic acid also has isomers with α (alpha)-pyranose structure and β (beta)-pyranose structure (see the mannan section).

Alginic acid is a polyuronic acid formed by dehydration (dehydration condensation) of β-pyranose type D-mannuronic acid and α-pyranose type L-guluronic acid at the hydroxyl group -OH of the first carbon and the hydroxyl group of the fourth carbon. It is written as β-1,4-D-mannurono-α-1,4-L-guluronoglycan. The mixture ratio of D-mannuronic acid (M) and L-guluronic acid (G) varies depending on the origin and part of the algae body, but all are composed of M blocks (average 10-15 M bonds), G blocks (average 25-30 G bonds), and mixed blocks.

Alginic acid exists in the form of calcium, magnesium and other salts as a mucilaginous polysaccharide in the cell walls of brown algae (kelp, wakame, etc.) and other algae. Some bacteria secrete alginic acid that has been partially esterified with acetate. Free alginic acid is insoluble in water, but soluble in alkali. It is prepared by extracting calcium and magnesium salts from the cell walls of brown algae with dilute alkali.

Sodium salts, potassium salts, and propylene glycol esters of alginic acid are water-soluble and are called algins (in the narrow sense, algin refers to the sodium salt). These dissolve in water to form a viscous colloidal solution, and are therefore used in a wide variety of applications. Sodium salts are used as a food additive, a stabilizer for ice cream and dressings, an emulsifier for soft drinks, a thickener for jams and mayonnaise, and as a medicine in hemostatic agents and ointments, as well as in textile processing agents and water-based paints. When sodium alginate is reacted with calcium ions, it gels, and is therefore used in the production of alginate fiber and artificial salmon roe, and as a carrier for immobilized enzymes (enzymes fixed to insoluble carriers or polymer gels. This allows the enzyme reaction to be carried out continuously and the enzymes to be recovered after the reaction).

藻類の細胞間にある粘液多糖類。構造上はポリウロン酸の一種。ポリウロン酸とは、ウロン酸が多数結合したものをいい、ウロン酸はアルドース（アルデヒド基をもつ糖）のアルデヒド基とは反対の末端の炭素がカルボキシ基（カルボキシル基）-COOHとなった構造をしたものの総称である。D-マンノース（アルドースの一種）の6位の炭素がカルボキシ基になったものをD-マンヌロン酸といい、L-グロース（アルドースの一種）の6位の炭素がカルボキシ基になったものをL-グルロン酸という。ウロン酸もアルドースと同じように、α(アルファ)-ピラノース構造とβ(ベータ)-ピラノース構造の異性体がある（マンナンの項参照）。

　アルギン酸はβ-ピラノース型のD-マンヌロン酸とα-ピラノース型のL-グルロン酸が、1番目の炭素のヒドロキシ基-OHと4番目の炭素のヒドロキシ基で脱水結合（脱水縮合）してできたポリウロン酸である。β-1,4-D-マンヌロノ-α-1,4-L-グルロノグリカンと表記する。D-マンヌロン酸（M）とL-グルロン酸（G）の混合比率は起源や藻体部分によって異なるが、いずれも、Mブロック（平均10～15のMが結合）、Gブロック（平均25～30のGが結合）、混合ブロックから構成されている。

　アルギン酸はカルシウム、マグネシウムその他の塩の形で褐藻（コンブ、ワカメなど）その他藻類に細胞壁粘質多糖として存在している。ある種の細菌は部分的に酢酸エステル化されたアルギン酸を分泌する。遊離のアルギン酸は水に不溶、アルカリに可溶。褐色藻の細胞壁のカルシウムやマグネシウム塩を希アルカリで抽出して調製する。

　アルギン酸のナトリウム塩、カリウム塩、プロピレングリコールエステルは水溶性でアルギンとよばれる（狭義のアルギンはナトリウム塩をさす）。これらは水に溶けて粘稠(ねんちゅう)なコロイド溶液になるので多方面に利用される。ナトリウム塩は食品添加物としてアイスクリームやドレッシングの安定剤、ソフトドリンクの乳化剤、ジャムやマヨネーズの増粘剤などに、また医薬品として止血剤、軟膏(なんこう)などに、その他繊維加工剤、水性塗料にも使われる。アルギン酸ナトリウムにカルシウムイオンを作用させるとゲル化するので、アルギン酸繊維、人造イクラの製造などに、また、固定化酵素（不溶性の担体や高分子ゲルなどに固定した酵素のこと。酵素反応を連続的に行うことができ、反応後に酵素を回収することができる）の担体として利用される。
