Sapodilla - Sapodilla (English spelling)

An evergreen tall tree of the Sapotaceae family (APG classification: Sapotaceae). It is also called the chewing gum tree or chicle. Native to tropical America, it is cultivated in tropical regions for its fruit and for its latex secretion, chicle. It grows to a height of 9-12 meters. The leaves are oblong, dark green, glossy, and firm, 4-15 cm long, with 1.2-2 cm petioles. The flowers are yellowish-white, tubular, 0.8-1.2 cm in diameter, and have a strong fragrance at night. The fruits are ovoid or spherical, 6-10 cm in diameter, with brown, rough skin. The shape and taste of the fruit and seeds are very similar to that of the persimmon plant. The flesh is reddish brown, somewhat rough, has a strong sweetness similar to brown sugar, and has a taste and aroma similar to that of dried persimmons. There are 3-6 seeds, each about 1.5 cm long.

The bark is cut and the sap collected, then boiled down to make natural chicle, which is used as an ingredient in chewing gum. When Columbus discovered the New World in 1492, it is said that the natives were already chewing chicle gum. The fruit is cooked by deep frying, and is also used as a sorbet and preserve. The bark contains tannins, which are used medicinally as an astringent, and as a dye for fishing nets and canvas. The leaves are also used in folk medicine. Fully ripe ones are also eaten raw. The seeds are said to be poisonous.

The main producing areas are Mexico, Guatemala, and Honduras, where it grows well in a warm and humid climate, and the best places to cultivate it are lowlands near the coast. It is propagated by seed, grafting, and layering.
