A sweet substance made by breaking down and saccharifying starch with enzymes or acids, its main components being maltose, glucose, and maltotriose. However, nowadays, candies made with sugar and sweet sugar are often called ame. In China, the detailed manufacturing process was already described in the 6th century Qimin Yaoshu, and the first appearance of the word tagane in Japanese literature was in the Jinmu Chronicle. In ancient times, the characters 餳 and 糖 were also used, and the Engishiki records that sugar was paid as tribute from various provinces, that there was a "sugar" store in the west market of Heian-kyo and that 3 to 7 sho of sugar were made from 1 koku of glutinous rice and 2 to of moko wheat (wheat sprouts).
