A marine fish belonging to the order Pleuronectiformes and family Pleuronectidae of the class Osteichthyes. It is found in the waters of central Honshu, Karafuto (Sakhalin) and the Kuril Islands, but is rarely found in the Sea of ​​Japan and the Sea of ​​Okhotsk. Its Japanese name comes from the high fat content of its meat. It resembles the Greenland flounder in that it has an oblong body, a very large mouth that opens to the rear edge of the eyes, and the rear edge of its tail fin is almost straight or indented on both sides, but can be distinguished by two rows of canines on both the upper and lower jaws, the inner teeth of which can be retracted, and most of its teeth being bow-arrow shaped with inverted spines at the tips. The body is often dark yellow-brown on the eyed side and yellow-brown on the eyeless side.

It lives on sandy and muddy bottoms at depths of 60 to 900 meters, and feeds on Atka mackerel, herring, flatfish, and squid. It grows to just over one meter in length. Females reach maturity at 8 to 9 years old, while males reach maturity at 6 to 7 years old, and spawn from autumn to winter. It is caught in large quantities using trawls and longlines from November to December. Its meat is fatty and previously considered unpalatable, but it tastes good if steamed, the fat removed, and then simmered.

硬骨魚綱カレイ目カレイ科に属する海水魚。本州中部海域から樺太(からふと)(サハリン)や千島列島にかけて分布するが、日本海とオホーツク海には少ない。和名は肉に脂(あぶら)が多いことに由来する。体は長楕円(ちょうだえん)形であること、口は著しく大きく、目の後縁まで開くこと、尾びれの後縁は上下にほぼまっすぐか湾入形であることなどでカラスガレイに似るが、上下のあごには2列の犬歯が並び、内側の歯は倒すことができること、大部分の歯は先端に逆さの棘(とげ)をそなえる弓矢状であることなどの特徴で区別できる。体は有眼側では暗黄褐色、無眼側では黄褐色のものが多い。

 水深60~900メートルの砂泥底にすみ、ホッケ、ニシン、カレイ、イカ類を食べる。全長1メートル余りになる。雌は生後8~9年で、雄は6~7年で成熟し、秋から冬にかけて産卵する。11~12月ごろにトロールや延縄(はえなわ)で多量に漁獲される。肉は脂が多く不味とされていたが、蒸して脂を除いてから煮つけると味がよい。
