Rhizopus - Spider mold

A mold belonging to the zygomycete order Mucorales. It is widely distributed in nature and is named after its spider web-like appearance to the naked eye. Its hyphae grow on the surface of the substrate, such as food, like the stolon of a strawberry, and are also called hyphae because they lay down rhizoids at the contact points with the substrate. The mycelium is initially snow-white in color, but later turns grayish white. One or more sporangiophores arise from the nodes of the hyphae that have laid down rhizoids, and a spherical sporangium attaches to the tip. The sporangium is initially white, then black, and contains numerous sporangiospores. When mature, the sporangium splits, scattering the spores into the air. Sexual reproduction is by zygospores. Dioecious strains are common, but monoecious strains also exist. Molds of this genus are used for amylofermentation, organic acid fermentation, etc.

接合菌類、ケカビ目に属するカビ。自然界に広く分布し、肉眼的外観がくもの巣状を呈するのでこの名がある。菌糸は食品などの基質の表面をイチゴの匍匐枝(ほふくし)のように伸長し、基質との接点に仮根を下ろすためにハイカビともいう。菌叢(きんそう)は初め雪白色であるが、のちに灰白色となる。胞子嚢(ほうしのう)柄は仮根を下ろした菌糸の節から1本または数本生じ、先端に球状の胞子嚢を着生する。胞子嚢は初め白色、のち黒色となり、多数の胞子嚢胞子を包んでいる。成熟すると胞子嚢は裂け、空中に胞子が飛散する。有性生殖は接合胞子によって行われる。雌雄異株が普通であるが、同株のものもある。この属のカビはアミロ発酵、有機酸発酵などに利用される。
