A carboxylic acid represented by C 6 H 11 O 4 COOH. It is a crystal with a melting point of 162°C. It was discovered in cinchona bark, but is also found in coffee seeds and sugar beet leaves. It is also widely distributed in plants as a component of chlorogenic acid. It is a compound equivalent to 1,3,4,5-tetrahydroxycyclohexane-1-carboxylic acid, and is produced by ring closure of heptose derivatives. It is also thought to play an important role in the biosynthesis of aromatic compounds via shikimic acid.
