A carboxylic acid represented by C ₆ H ₁₁ O ₄ COOH. It is a crystal with a melting point of 162°C. It was discovered in cinchona bark, but is also found in coffee seeds and sugar beet leaves. It is also widely distributed in plants as a component of chlorogenic acid. It is a compound equivalent to 1,3,4,5-tetrahydroxycyclohexane-1-carboxylic acid, and is produced by ring closure of heptose derivatives. It is also thought to play an important role in the biosynthesis of aromatic compounds via shikimic acid.

C₆H₁₁O₄COOH で表わされるカルボン酸。融点 162℃の結晶。キナ皮から発見されたが，コーヒーの種子，サトウダイコンの葉などにも存在する。また，クロロゲン酸の成分として広く植物に分布する。1，3，4，5-テトラヒドロキシシクロヘキサン-1-カルボン酸に相当する化合物で，ヘプトース誘導体の閉環によって生成する。またシキミ酸を経て芳香族化合物にいたる生合成過程で重要な役割を担っていると考えられている。
