Sesame vinegar or poppy vinegar, which are made by adding ground sesame seeds or poppy seeds, mizore vinegar with grated daikon, mustard vinegar flavored with tokigarashi, umeboshi vinegar with strained umeboshi plums, kimi vinegar made by adding egg yolk and heating to give it a thick consistency, and sanbai vinegar made by adding kudzu starch to make it thick are all called Yoshino vinegar. The key to making vinegared dishes is to salt or boil the ingredients, rinse them in vinegar, and then mix them with the mixed vinegar to prevent the finished product from being watery....
