Noble Rot Wine - Kifuwain

Wine made from noble rot grapes. Botrytis cinerea, a type of fungus (mold), grows on the skin of overripe grapes, dissolving the wax on the skin and evaporating other moisture, causing the grapes to shrivel up. This noble rot grapes have concentrated sugar, which amounts to 30-40% in the juice. Therefore, even if 14% alcohol is produced by fermentation with yeast, about 10% sugar still remains, resulting in a sweet liquor. Noble rot not only concentrates sugar, but also other components, and further produces glycerin and gluconic acid, and the wine made from it is a high-quality white wine with a strong aroma, a rich and smooth taste, and a golden color.

Sauternes in France, Trockenbeerenauslese in Germany, and Tokaj Aszu in Hungary are made from noble rot grapes. In Japan, it has also recently become popular. When noble rot grows on unripe grapes, it causes the grapes to rot. It also causes the pigments in red grapes to fade. Therefore, noble rot only becomes a good source of wine when it grows on fully ripe white grapes. Noble rot is called Edelfäule in German and pourriture noble in French, which means "noble rot".

貴腐ブドウからつくられるワイン。不完全菌（カビ）の一種であるボトリシス・シネレアが過熟したブドウの果皮上に繁殖し、果皮のろう質を溶かし、その他の水分が蒸発して、ブドウがしぼんだ状態になったものを貴腐という。この貴腐ブドウは糖分が濃縮されており、果汁では30～40％にもなる。したがって、酵母による発酵でアルコールが14％生成しても、まだ糖分は10％ぐらい残存しており、甘口の酒が得られる。また貴腐は糖分のみならず、他の成分も濃縮され、さらにグリセリン、グルコン酸などが生成されており、これからつくられるワインは香りが高く、味は濃厚で滑らか、黄金色をした最高級の白ワインである。

　フランスのソーテルヌ、ドイツのトロッケンベーレンアウスレーゼ、ハンガリーのトカイ・アスーがこの貴腐ブドウからつくられる。わが国でも近年つくられるようになった。なお、貴腐菌は未熟なブドウに生育するとブドウを腐らせてしまう。また赤ブドウの色素を退色させる。したがって、完熟した白ブドウに生育したときにのみ優良なワイン原料になる。貴腐はドイツ語でエーデルフォイレEdelfäule、フランス語でプーリチュール・ノーブルpourriture noble、すなわち「高貴なる腐敗」とよばれる。
