Cantal: A cheese produced in the Auvergne region of France (AOC designated region). Obtained AOC in 1980. Cylindrical in shape. Semi-hard. Named after the Cantal mountain range in which it is produced. Also known as Fourme de Cantal. One of the large cheeses that represents the Auvergne region.
