Industrially, glucose is obtained by hydrolyzing starch with two types of microbial amylases, α-amylase and glucoamylase. The glucose produced is used as a sweetener, for food, medicine, and other purposes, and in Japan, JAS (Japanese Agricultural Standards) have been established for three types: hydrated crystalline glucose, anhydrous crystalline glucose, and refined glucose. Any starch can be used as the raw material for glucose, but currently corn starch, sweet potato starch, and potato starch are used.
