Fruit vinegar - Kajitsusu

A general term for brewed vinegar made from fruit juice. JAS (Japan Agricultural Standards) stipulates that 1 liter of fruit vinegar must contain at least 300 grams of fruit juice, and it must be brewed vinegar. There are apple vinegar, grape vinegar (wine vinegar), and sherry vinegar made from sherry (a white wine unique to Spain). In addition to 4-5% acetic acid, it contains organic acids such as citric acid and malic acid contained in the fruit itself, and has a good aroma, making it a flavorful vinegar. It is made by fermenting the fruit juice itself, or adding ethanol (ethyl alcohol) diluted with water to the fruit juice and fermenting it. After fermentation, it is stored and aged for several months. Taking advantage of its good flavor, it is used in salad dressings and mayonnaise, as well as being used as an ingredient in processed seasonings such as tomato ketchup and barbecue sauce.

果汁を原料とする醸造酢の総称。JAS(ジャス)(日本農林規格)では、果実酢1リットル中に300グラム以上の果汁が使用されていることが規定されていて、醸造酢でなければならない。りんご酢、ぶどう酢(ワイン酢)、シェリー酒(スペイン特産の白ワイン)を原料にしたシェリー酢などがある。4~5%の酢酸のほか、果実自体に含まれていたクエン酸、リンゴ酸などの有機酸を含むのと、香りがよいため、風味のよい食酢である。製法は、果汁そのものを発酵させるか、果汁に水で薄めたエタノール(エチルアルコール)を添加し発酵させる。発酵後、数か月貯蔵し熟成させる。風味のよさを利用し、サラダドレッシング、マヨネーズに用いられるほか、トマトケチャップやバーベキューソースなど加工調味料の原料としても利用される。
