Kakiage - Kakiage

A type of tempura. It is basically made by deep-frying fresh clam shells in a thick batter. Authentic kakiage is made when the batter is thoroughly cooked and the shells are still raw. Furthermore, the standard is that all the pieces are the same size and shape. In addition to shells, other common ingredients for kakiage include chopped shrimp and squid, and vegetables such as sweet potato, potato, and lotus root mixed with leafy vegetables, as well as squid and shrimp mixed with vegetables, and fruits such as bananas and oysters.

てんぷらの一種。濃い衣を用い、新鮮なバカガイの柱（小柱）を揚げるのが基本である。衣に熱が通り、しかも貝柱はなまのままであるのが本格的かき揚げ。そのうえ、揚げたものがみな同じ大きさと形であるのを標準とする。かき揚げの一般材料としては、小柱のほかに小エビ、イカの刻んだもの、野菜ではサツマイモ、ジャガイモ、蓮根(れんこん)などを主体に葉菜類を混ぜたもの、イカ、エビなどに野菜を混ぜ合わせたり、バナナ、カキなどの果実を加えたものもある。
