Mustard oil (mustard seed oil)

Japanese: カラシ油(芥子油) - からしゆ（英語表記）mustard oil

Mustard oil is a type of fatty oil obtained by squeezing the seeds of mustard, a plant of the Brassicaceae family. It can also refer to volatile mustard oil, which is obtained by crushing, steeping in hot water, and steam distilling the seeds, as well as its main component, isothiocyanate esters. Mustard oil is a semi-drying oil similar to rapeseed oil, and is obtained from black mustard or white mustard at about 30%. It contains saturated fatty acids with carbon numbers 16, 18, 20, 22, and 24, but palmitic acid with carbon number 16 is the highest at 2.6%.

アブラナ科植物カラシナ類の種子であるカラシを圧搾して得られるカラシ脂肪油をいう。また，粉砕して温湯に浸した後，水蒸気蒸留して得られる揮発性カラシ油，さらにその主成分であるイソチオシアン酸エステルをさす場合もある。カラシ脂肪油は，ナタネ油に似た半乾性油であって，クロガラシまたはシロガラシから約30％得られる。飽和脂肪酸として炭素数16,18,20,22,24のものを含むが，16のパルミチン酸が2.6％で最高である。
