Barley is polished and heated and pressed. It is used for food. Barley has deep grooves and a thick husk, making it relatively difficult to polish. For this reason, the polishing process is more complex and extensive than that of rice. The main steps are screening, polishing, grinding, and pressing. The yield rate of refined pressed barley from raw barley is about 50%. Barley that is cut at the grooves and polished and pressed is called white barley (cut barley), and barley with added vitamins B1 and B2 is called enriched polished barley. Pressing pressed barley is done by heating it with steam and pressing it with a roll, with the purpose of making it easier to digest when eaten. White barley with thin grooves is preferred on the market. Polished barley with added flavorings is also available in small quantities.
