...Around the Genroku period (1688-1704), pepper was sold at drugstores, but there were also peddlers who sold powdered pepper along with powdered pepper, as can be seen in works by Saikaku. As Chikamatsu Monzaemon's Daikyoushi Sekakeki states, "Pepper is a staple of udon noodles, as is the case with wives' jealousy." In the later period, it seems to have fallen out of use, and Ota Nanpo wrote in Yatsukodako that "Until recently, pepper powder was added to udon noodles at the market, but that is no longer the case." ...

…元禄(1688‐1704)ごろには薬屋で売られる一方，粉ザンショウなどといっしょにコショウの粉を売り歩く行商人があったことは，西鶴の作品などに見える。近松門左衛門の《大経師昔暦》に〈本妻の悋気（りんき）と饂飩に胡椒はお定り〉とあるように，江戸前期うどんにはコショウがつき物であった。後期になってそれが廃れたようで，大田南畝は〈近頃まで市の温飩に胡椒の粉をつゝみておこせしが，今はなし〉と《奴師労之（やつこだこ）》に書いている。…
