The beef is raised in Shiga Prefecture, which is blessed with a rich natural environment surrounding Lake Biwa and abundant, clear water. Carefully selected Japanese black cattle are fattened using superior techniques. The meat is highly marbled, with a mellow fragrance and tenderness. It is said that in 1590 (Tensho 18), Takayama Ukon served beef to Gamo Ujisato and Hosokawa Tadaoki, and in 1687 (Jokyo 4), miso-marinated beef was invented in the Hikone Domain. In May 2007 (Heisei 19), it was registered as a regional collective trademark with the Japan Patent Office. The trademark registration number is No. 5044958. The owners of the regional collective trademark are the Shiga Prefecture Meat Business Cooperative, the Shiga Prefecture Dowa Meat Cooperative, the Shiga Prefecture Livestock Commercial Cooperative, and the National Federation of Agricultural Cooperatives.
