Kabosu - Kabosu

Japanese: カボス - かぼす
Kabosu - Kabosu

An evergreen small tree of the Rutaceae family (APG classification: Rutaceae). Old trees can be found in Oita Prefecture. A close relative of the yuzu. The leaves are rather small and winged. The fruit turns yellow in November, has a rough surface, and is somewhat difficult to peel. There is an unclear concave ring at the top of the fruit. It is harvested in September or October before it turns color. The fruit weighs about 110 grams, has nine lobes, and contains about 25 green polyembryonic seeds. The flesh is pale yellow, soft, and juicy. It is highly sour and not suitable for eating raw, but it is fragrant and has excellent flavor, and is prized for use in vinegar. It goes particularly well with Japanese cuisine. It is somewhat cold-resistant, and is suitable for areas with an average temperature of 14 to 15 degrees Celsius, and is widely cultivated in Oita Prefecture.
