Chitinase

An enzyme that randomly breaks down the β-1,4 bonds of chitin, ultimately converting it into N -acetyl- D -glucosamine. Chitin is the main structural polysaccharide in crustaceans, insects, and fungi, and some plants synthesize chitinase to defend themselves against pathogens. [CAS 9001-06-3]
