The poem also includes the names of Nara tofu and Uji tofu, showing that Nara and Uji were tofu-producing areas at the time, and that tofu sellers traveled from these two places to Kyoto. Soon, tofu production began to flourish in Kyoto, a major consumer area with good water, and tofu came to be counted as one of Kyoto's specialties. ...

…南北朝から室町期に入ると，豆腐の記事は日記類を中心にして急増し，室町後期の《七十一番職人歌合》には白い鉢巻をした女の豆腐売が描かれ，〈とうふ召せ，奈良よりのぼりて候〉と書かれている。歌のほうには奈良豆腐，宇治豆腐の名が見え，当時奈良や宇治が豆腐どころであったこと，この両地から京都にまで豆腐売が通っていたことがわかる。やがて大消費地であり，水のよい京都でも盛んにつくられるようになり，豆腐は京都名物の一つに数えられるようになった。…
