This is a bag-shaped fried tofu dish that has been simmered in a sweet and spicy sauce and wrapped around vinegared rice. The name comes from the fact that foxes, who are said to be messengers of the Inari god, are said to like fried tofu, and it is also called "shinoda sushi" in reference to the "kuzunoha fox" of Shinoda forest. According to the "Morita Manko," it originated in Nagoya in Owari, and in Edo, from around the end of the Tenpo era (1830-44), inari sushi sellers walked around the towns at night carrying lit lanterns with pictures of torii gates on them. At the time, wood ear mushrooms and dried gourd were mixed into the vinegared rice as toppings, but nowadays, shiitake mushrooms, carrots, snow peas, lotus root, etc. are often added. 甘辛く煮た豆腐の油揚げを袋状に開き,酢飯を包んだもの。稲荷神の使女(つかわしめ)とされるキツネが油揚げを好むとするところからの称で,信太(田)(しのだ)森の〈葛の葉狐〉にこじつけて〈しのだずし〉とも呼ぶ。《守貞漫稿》によると,発祥地は尾張の名古屋で,江戸では天保(1830‐44)の末ごろから,鳥居の絵をかいた行灯に灯を入れた稲荷ずし売りが夜の町々を売り歩いたという。当時は酢飯にキクラゲやかんぴょうを具としてまぜていたが,いまではシイタケ,ニンジン,さやエンドウ,れんこんなどを加えることが多い。
