Japanese:
Inari sushi (Inari sushi) - Inari sushi
This is a bag-shaped fried tofu dish that has been simmered in a sweet and spicy sauce and wrapped around vinegared rice. The name comes from the fact that foxes, who are said to be messengers of the Inari god, are said to like fried tofu, and it is also called "shinoda sushi" in reference to the "kuzunoha fox" of Shinoda forest. According to the "Morita Manko," it originated in Nagoya in Owari, and in Edo, from around the end of the Tenpo era (1830-44), inari sushi sellers walked around the towns at night carrying lit lanterns with pictures of torii gates on them. At the time, wood ear mushrooms and dried gourd were mixed into the vinegared rice as toppings, but nowadays, shiitake mushrooms, carrots, snow peas, lotus root, etc. are often added.
