Okinawan cuisine in which ingredients are stir-fried in oil. In particular, in hot Okinawa, food (ingredients) are often stir-fried in oil to make food last longer. Typical dishes include kubu (kelp) irichi, sunshi (shinachiku) irichi, kanpyo irichi, ukara (okara) irichi, dekuni (daikon) irichi, and chikina (takana) irichi, and many others are made as home-cooked dishes. There are no specific ingredients, but if kelp is the main ingredient, it will be called kubu irichi, and if daikon is the main ingredient, it will be called dekuni irichi.

材料を油で炒(いた)め煮にした沖縄料理。とくに暑い沖縄では、料理の日もちをよくするために、食品(材料)をよく油で炒める。代表的なものにくーぶ(昆布)いりちー、すんしー(しなちく)いりちー、かんぴょういりちー、うから(おから)いりちー、でーくに(ダイコン)いりちー、ちきな(タカナ)いりちー、そのほか数多く家庭料理としてつくられている。特別に材料は取り決められてはいないが、昆布が主体ならばくーぶいりちー、ダイコンが主体ならばでーくにいりちーという献立名になる。
