...In the Edo period, the technology for making shochu was introduced, and kasutori shochu was made by distilling new lees in a seiro. The lees were used as fertilizer for rice cultivation to increase rice yields, and were also used as a raw material for lees vinegar (see the entry for vinegar). The lees in the form of plates are called itakasu, and can be roasted and eaten as is, or dissolved in hot water and sugar added to make instant sweet sake, or made into lees soup with salted fish and vegetables.
