… The names of famous local liquors during the Tang Dynasty are listed in the “Tang Guoji Fu” (The History of the Tang Dynasty), and with the exception of some such as grape wine, they are all from the ancient Chinese yellow wine family. Today, the baijiu family of liquors, of which “Maotai” is considered the best, is said to have originated from the Yuan Dynasty, when its production method was introduced from the Southern Barbarians and it was called “Aliki” or “Araki” and was popular (Araku). The techniques of brewing are described in the “Qi Min Yaoshu” (The Min of Qi) by Jia Sixie of the Northern Wei Dynasty, the “Ju Jing” (The Classic of Wine) by Zhu Huo of the Northern Song Dynasty, and the “Tian Gong Kaiwu” (The Divine Creation) by Song Yingxing of the Ming Dynasty, and in the Ming Dynasty, biographies of liquor enthusiasts such as “History of Wine” and “Ju Yin” (The History of Wine) also appeared. …
