[Ethyl vanillin]
A compound with an _{-OC2H5 group} instead of the _-OCH3 group in the vanillin molecule was synthesized, and it was found to have a similar fragrance to vanillin, but with a stronger odor. This is called ethyl vanillin, or bourbonal. It does not color like vanillin, so it is widely used in products where coloring is undesirable, and in the same applications as vanillin, as a compound flavoring with sweet floral or fruity flavors.
