A spirit with an alcohol content of 40-45% produced in Scandinavian countries such as Denmark, Norway, and Sweden. The name comes from the Latin aqua vitae (water of life). The raw materials, potatoes and rye, are saccharified with malt and fermented. Distillation is performed using a continuous still to obtain 95% pure alcohol. This is diluted to about 60%, and herbs, roots, and bark, mainly caraway seeds, are added, and the spirit is distilled in a pot still.
