Maotai liquor - Maotai liquor (English spelling) Máo tái jiǔ

Japanese: マオタイチュウ(茅台酒) - マオタイチュウ（英語表記）Máo tái jiǔ

A distilled liquor made in Maotai, Renhuai County, Guizhou Province, southern China. The main ingredient is sorghum, which is fermented with koji and distilled, then stored and aged for a long period of time to produce the product. During the Kangxi period of the Qing Dynasty (1662-1722), a merchant from Xinghua Village, Shanxi Province, where Fenjiu is produced, visited the area and lamented that the liquor tasted bad despite the beautiful scenery and good water. He brought along a liquor brewer from Xinghua Village and had them make a liquor that was just as good as Fenjiu.

中国南部の貴州省仁懐県茅台でつくられている蒸留酒。コーリャンを主原料とし，大麴（だいきく）を用いて固体発酵させたものを蒸留し，長期間貯蔵熟成させて製品とする。清の康熙（こうき）年間(1662‐1722)のこと，汾酒（フエンチユウ）の産地である山西省杏花村の商人が同地を訪れ，風光明美で水もよいのに酒のまずいことを惜しみ，杏花村から酒造りの職人を伴って行き，つくらせたところ，汾酒に劣らないほどのものができた。
