1825‐95 German physiological chemist. He started out as a physician, but became a researcher under R. Virchow at the University of Berlin. He achieved great success in the study of various biological components such as hemoglobin, chlorophyll, and proteins, as well as in chemical research into in vivo oxidation, fermentation, and putrefaction, and became the founder of physiological chemistry, the starting point of modern biochemistry. In 1872 he became a professor at the University of Strasbourg (now Strasbourg). In 1877 he founded the Journal of Physiological Chemistry and wrote its famous inaugural address.
