German physiological chemist. He started out as a physician, but became a researcher under R. Virchow at the University of Berlin. He achieved great success in the study of various biological components such as hemoglobin, chlorophyll, and proteins, as well as in chemical research into in vivo oxidation, fermentation, and putrefaction, and became the founder of physiological chemistry, the starting point of modern biochemistry. In 1872 he became a professor at the University of Strasbourg (now Strasbourg). In 1877 he founded the Journal of Physiological Chemistry and wrote its famous inaugural address. The magazine still bears his name today.

ドイツの生理化学者。医師として出発したが，ベルリン大学でR.フィルヒョーの門に入って研究者となる。ヘモグロビン，葉緑素(クロロフィル)，タンパク質など各種生体成分の研究や，生体内酸化，発酵，腐敗などの化学的研究で業績をあげ，現代の生化学の起点である生理化学の確立者となった。1872年にシュトラスブルク(現，ストラスブール)大学教授。77年に《生理化学雑誌》を発足させ，有名な創刊の辞を書いた。この雑誌は今日も彼の名を冠して続いている。
