Pancakes are made by frying ingredients in a frying pan or on a hot griddle. They are called hotcakes (warm cakes) because they are eaten while still hot. In America, they are called grilled cakes, and are often served as breakfast or light meals with less sweetness and bacon or sausages. The ingredients are flour, milk, baking powder, eggs, and sugar. They are also sold commercially as hotcake mix powder. They are a British-style cake similar to French crepes. In Japan, they were called hat cakes during the Taisho era, and were popular. Two separately baked cakes are stacked on top of each other, drizzled with syrup, topped with diced butter, and eaten with a knife and fork. In America, there are pancake houses, where you can order your favorite pancakes for breakfast. To make them, sift together flour (200 grams) and baking powder (2 teaspoons). Separately, lightly whisk together eggs, sugar (40 grams), and salt (1 teaspoon), and add 200cc of milk. Add flour to this, mix without kneading, and bake in a thick frying pan. Maple syrup from maple trees is the best sauce, but caramel sauce is often used instead.
