〘Noun〙 (A variation of "hakutaku". Also "botou") Raw handmade udon noodles simmered in miso soup. Pumpkin, eggplant, etc. are used as toppings. In the past, it was made by kneading wheat flour with water, rolling it out, and cutting or tearing it into an appropriate shape, similar to modern udon.
