Japanese: 福神漬 - ふくじんづけ

This food is made by chopping vegetables into small pieces and soaking them in a seasoning liquid. It is said to have been named after the Seven Lucky Gods, as it uses seven different ingredients. The main vegetables used for the pickling are daikon radish, eggplant, and sword beans, with lotus, shiso fruit, bamboo shoots, ginger, shiitake mushrooms, and other vegetables depending on the region of origin. Ingredients that are harvested early are salted or dried for storage. The seasoning liquid is a mixture of soy sauce, mirin, sugar, starch syrup, vinegar, and coloring.

野菜を細かく切り調味液に漬込んだ食品。材料を7種使ったところから七福神にちなんで名づけられたという。漬込む野菜は大根，なす，なたまめを主材料にし，はす，しその実，竹の子，生姜，しいたけその他産地により異なる。収穫期の早い原料は塩漬や乾燥して貯蔵しておく。調味液は醤油，味醂，砂糖，水飴，酢，色素などを混ぜ合せたもの。
