Nitrogen Determination Method

The Kjeldahl method is commonly used in nutrition. In this method, the sample is oxidized with hot concentrated sulfuric acid and the nitrogen is quantified as ammonia. This method cannot quantify nitrogen in the nitrate form. Another method is the Dumas method, which converts nitrogen into nitrogen gas and then quantifies it. 栄養学ではケルダール法が一般に用いられる．この方法は，試料を熱濃硫酸で酸化し，窒素をアンモニア態として定量する．この方法では硝酸態の窒素は定量できない．ほかに窒素を窒素ガスに変えて定量するデュマ法がある．
