The Kjeldahl method is commonly used in nutrition. In this method, the sample is oxidized with hot concentrated sulfuric acid and the nitrogen is quantified as ammonia. This method cannot quantify nitrogen in the nitrate form. Another method is the Dumas method, which converts nitrogen into nitrogen gas and then quantifies it.
