Young shoots that grow on the underground stems of bamboos. Edible. Moso bamboo produces good quality bamboo shoots and is the most common. Other delicious bamboo shoots include Madake, Hachiku, and Kurile-zasa (Nemagaridake) in the Chubu and Tohoku regions. They are dug up when the tips emerge above ground and cut from the joints of the underground stems. They are first boiled to remove the bitterness before cooking.
