Saccharose is also called sucrose. It is a disaccharide consisting of one glucose molecule and one fructose molecule, synthesized by many plants such as sugar cane and sugar beet. Industrial products that are mainly made of sucrose are collectively called sugar. The words sucrose and sugar are often used interchangeably, but when dealing with the chemical substance, the name sucrose is always used. サッカロースsaccharose,スクロースsucroseともいう。サトウキビ,サトウダイコン(テンサイ)などの多くの植物によって合成されるグルコースとフラクトースが1分子ずつ結合した二糖類。ショ糖を主体とする工業的製品を総称して砂糖と呼ぶ。ショ糖および砂糖という言葉は混同して使われることが多いが,化学物質として扱う場合はつねにショ糖の名称が用いられる。ショ糖は光合成能力のあるすべての植物体に見いだされ,人類には甘味料としてひじょうに古くから用いられていた歴史をもつ。
