This is a pre-assembled meal consisting of meat, cheese, and vegetables between thin slices of bread. It is said that the name was derived from the British Earl of Sandwich. John Montague Earl of Sandwich (1718-1792), the fourth of the Earl family, became an admiral at the age of 30, but he had a natural love of gambling, and when he was absorbed in playing cards, he would continue eating without taking time to eat. He would order his servants to put roast beef or other dishes between slices of bread and eat them, and he would encourage his guests to do the same, which became famous, and this food came to be called a sandwich. This way of eating bread was already seen in ancient Rome, and in ancient Russia, open sandwiches were used as a kind of appetizer. In Germany, a small piece of bread with meat or sausage sandwiched between it is called belegtes Brötchen, and the word belegen also means "male on female," so it is expressed in a sexual sense. Filling the bun with an omelet or egg was a trend that was introduced in France, while in America, grilled cheese is often used. Fillings have varied according to national tastes, but from the end of the 19th century, the types of fillings have become more diverse.

As such, the sandwich originated in Britain as a simple individual meal, so the British style sandwich is a half meal, but in the Anglo-American style it became a whole meal for gatherings such as country clubs, where it is called a club sandwich and eaten with a knife and fork.

Sandwiches can be classified according to their shape as follows:

(1) Closed sandwich: A regular sandwich with the filling between two slices of bread.

(2) Open sandwiches are made by placing the filling on bread and assembling it while considering the harmony of color and flavor. The Danish Smorrebröd is a famous example of a typical Scandinavian sandwich, and it has 200 different kinds of open sandwiches made using five different kinds of bread.

(3) Decker Sandwiches There are double-decker sandwiches, which have two layers of filling sandwiched between three slices of bread, and three-decker sandwiches, which have three layers of filling sandwiched between four slices of bread.

(4) Toast Sandwich: A thick slice of bread is toasted and filled with hot fillings such as a fried egg and grilled bacon. Unlike regular sandwiches, which are cold foods, toast sandwiches aim to offer the deliciousness of a hot food.

(5) Hot sandwiches. Hamburgers and hot dogs are typical examples.

(6) Party Sandwiches The most common are rolls and loaves. Roll sandwiches are made by wrapping the filling in bread like a nori roll, creating a beautiful color and shape. Loaf sandwiches are made in large, attractive loaves and cut up in front of the customers. Self-service sandwiches are made by placing thin slices of bread and filling separately, and customers can assemble their own sandwiches to their liking.

Ingredients and Preparation

Most sandwich breads are made from square loaf bread, baguettes, butter rolls, hamburger rolls, and brown bread. The thickness is determined by the type of sandwich. For square loaf bread, the standard thickness is about 5 mm, and for parties it is cut to about half that thickness, and for toast and sandwiches it is cut to twice the thickness. Bread for sandwiches is made from rich ingredients (containing additional ingredients) with a high ratio of sugar and fats, etc., so it is soft when baked and difficult to slice thinly. It is usually said that it is best to leave it for a day to harden it a little, but if the bread hardens it will go stale, the starch will become harder to digest, and the flavor will deteriorate. It is best to make bread that is not stale as much as possible.

The butter is creamed and smooth, and depending on the filling, a small amount of paste is mixed in, and then the bread is evenly and generously spread on the bread. This not only adds to the flavor of the butter, but also prevents the moisture from the filling from soaking into the bread, and also helps to stick the filling in place so that it does not move.

The filling is a combination of processed meats such as ham, sausage, roast meat, corned beef, and liver paste, sardines pickled in vinegar and oil, smoked salmon and trout, canned fish, various types of cheese, boiled eggs, raw vegetables such as cucumbers, tomatoes, onions, and lettuce, and fruits such as apples, bananas, and strawberries. It is presented with parsley, pickles, and pickled ginger to make it look beautiful and to balance the texture. As a meal, it is good to combine fish, meat, and vegetables in terms of nutritional content.

薄切りのパンの間に肉、チーズ、野菜などを挟んだ組立て食。この名称はイギリスのサンドイッチ伯にちなんだといわれる。伯爵家の4代目に生まれたジョン・モンターギュ・サンドイッチ伯（1718―92）は30歳で海軍大将になったが、生まれつきの性格が賭博(とばく)好きで、トランプに熱中すると食事する時間を惜しんで食べながら続ける。そこで召使いに命じてパンの間にローストビーフやその他の料理を挟んで食べるのを常とし、相手にもこれを勧めていたので有名になり、この食べ物がサンドイッチとよばれるようになった。このようなパンの食べ方は、すでに古代ローマにもみられ、古くロシアでも前菜の一種としてオープン・サンドが使われていた。ドイツでは、小形のパンに肉やソーセージを挟んだものをベレークテス・ブレーチヒェンbelegtes Brötchenといい、ベレーゲンbelegenという語には「雌に雄をかける」という意味もあって、性的に表現したことばで表されている。オムレツや卵などを挟むのはフランスからの流行で、アメリカではあぶったチーズを用いることが多いなど、中身（フィリング）は各国好みでさまざまであったが、19世紀の終わりごろからは中身の種類も多様になってきた。

　このように、サンドイッチは個人の簡易食としてイギリスに起源したので、イギリス流のサンドイッチは半食分half mealであるが、アングロ・アメリカ流では集会食用としてカントリークラブなどで1食分whole mealに変わり、クラブ・サンドイッチとよんでナイフとフォークで食べる。

種類

サンドイッチを形態で分類すると次のようになる。

(1)クローズド・サンドイッチ　2枚のパンに中身を挟んだ普通のサンドイッチ。

(2)オープン・サンドイッチ　パンの上に中身をのせて、彩りと味の調和を考えて組み立てられる。デンマークのスモーレブロードは北欧を代表する有名なもので、5種のパンを使って200種ものオープン・サンドをつくる。

(3)デッカー・サンドイッチ　パン3枚に中身を2層に挟んだダブルデッカーと、パン4枚に中身を3層に挟んだスリーデッカーなどがある。

(4)トースト・サンドイッチ　食パンを厚めに切ってトーストし、卵の目玉焼き、焼きベーコンなどの温かい中身を挟む。普通のサンドイッチが冷食であるのに対して温食のおいしさをねらっている。

(5)ホット・サンドイッチ　ハンバーガー、ホットドッグが代表的なものである。

(6)パーティー・サンドイッチ　ロールものとローフものが代表的。ロール・サンドイッチは、パンで中身をのり巻きのように巻き、色や形を美しくつくる。ローフ・サンドイッチは、大形のローフのまま華やかにつくり、客前で切り分ける。また、セルフサービス・サンドイッチは、薄切りのパンと中身を別々に並べ、各自が好みによって組み立てながら食べる。

材料と作り方

サンドイッチをつくるパンは角食パン、バゲット、バターロール、ハンバーガーロール、黒パンなどが多い。サンドイッチの種類によって厚さを決める。角食パンでは5ミリメートルくらいの厚さが標準で、パーティー用にはその半分くらい、トースト・サンドイッチ用には倍の厚さに切る。サンドイッチ用のパンには、砂糖、油脂などの配合率の多いリッチ（副材料が入ったもの）なものが用いられるため、焼き上がりが柔らかく薄切りにしにくいので、普通は1日置いてすこし固くなったものがよいとされるが、パンが固くなると老化して、デンプンが消化しにくくなり、香味も落ちてくる。できるだけ古くしないでつくるほうがよい。

　バターはクリーム状に滑らかに練り、中身に応じて練りがらしを少量混ぜ合わせ、パンに平均にたっぷり塗る。これは、バターの風味を加えるだけでなく、中身の水分をパンに浸み込ませないためでもあり、また挟んだ中身が動かないように張り付けるためでもある。

　中身はハム、ソーセージ、ロースト肉、コンビーフ、レバーペーストなどの加工肉類、イワシの酢油漬け、サケやマスの薫製、魚の水煮缶詰類、各種のチーズ、ゆで卵、キュウリ、トマト、タマネギ、レタスなどの生野菜類、リンゴ、バナナ、イチゴなどの果物類を組み合わせる。盛付けにはパセリ、ピクルス、紅しょうがなどで、見た目にも美しく、食感のバランスも整える。食事としては、魚、肉類と野菜類を栄養成分的に組み立てるのがよい。
