Japanese: 酒造歌 - さけつくりうた

Also called "sakaya-uta," these are labor songs sung when sake is brewed at a sake brewery. A specialized sake brewer who comes to work from rural areas for about three months in winter during the sake brewing season is called a toji. Depending on the place of origin, toji were called Nanbu toji, Echigo toji, Tamba toji, etc. There were various types of songs according to the steps of the sake brewing process. For example, in the Gogo region of Nada, on the north shore of Osaka Bay, which has the oldest history, there is the "oke-arai-uta," a song about soaking the six-foot oke and hangiri (basin-shaped tub) used in the previous year and other utensils in hot water and washing them with a bamboo brush, and this is also called "aki-arai" (autumn wash) or "washing place song."

〈酒屋歌〉ともいい，造り酒屋で酒を仕込むときに歌われる労作唄。酒造りの季節，冬期約3ヵ月間を主に農山村から出稼ぎに来る，専門の酒造り職人のことを杜氏（とうじ）と称する。杜氏はその出身地により，南部杜氏，越後杜氏，丹波杜氏などの名称で呼ばれた。その酒造り作業の工程に従って歌にいろいろの種類があった。最も古い歴史を有する大阪湾の北岸，灘（なだ）の五郷（ごごう）地方の酒屋歌の例でいえば，まず前年度に使用された六尺桶や半切（はんぎり）といって盥（たらい）状の桶その他の器具類を熱湯につけてささらで洗うときの〈桶洗い歌〉があり，これを〈秋洗い〉とか〈洗い場の歌〉ともいう。
