A type of chain dicarboxylic acid, it was first obtained by the dry distillation of amber, a fossil resin, hence the name (the Latin word succinum means amber). In addition to amber, it is also found in resin, lignite, bivalve shellfish, algae, and lichens. It is also produced in small amounts during alcoholic fermentation, so it is found in sake. It has the molecular formula HOOCCH 2 CH 2 COOH, a melting point of 188°C, a boiling point of 235°C, and a specific gravity of 1.564, forming colorless columnar crystals. It is odorless and has a unique sour taste. It is soluble in hot water, alcohol, and acetone, but is sparingly soluble in ether and cold water. 鎖状ジカルボン酸の一種で,最初に化石樹脂であるコハクの乾留によって得られたのでこの名がある(ラテン語succinumはコハクのこと)。コハクのほか,樹脂,褐炭や二枚貝,藻類,地衣類中にも含まれる。アルコール発酵の際にも少量生成するので清酒の中にも含まれている。分子式HOOCCH2CH2COOH,融点188℃,沸点235℃,比重1.564の無色柱状晶。無臭で特異な酸味を有する。熱水,アルコール,アセトンに可溶,エーテル,冷水に難溶。
