A type of chain dicarboxylic acid, it was first obtained by the dry distillation of amber, a fossil resin, hence the name (the Latin word succinum means amber). In addition to amber, it is also found in resin, lignite, bivalve shellfish, algae, and lichens. It is also produced in small amounts during alcoholic fermentation, so it is found in sake. It has the molecular formula HOOCCH 2 CH 2 COOH, a melting point of 188°C, a boiling point of 235°C, and a specific gravity of 1.564, forming colorless columnar crystals. It is odorless and has a unique sour taste. It is soluble in hot water, alcohol, and acetone, but is sparingly soluble in ether and cold water.
