Aspergillus oryzae (English spelling) Koji‐fungus

Japanese: コウジカビ(麴黴) - コウジカビ（英語表記）Koji‐fungus

A general term for fungi of the genus Aspergillus. The mycelium is well developed, with septate hyphae growing and spreading, and in places upright conidiophores supporting the conidiophores are formed. The upper part of the mycelium is rounded and bulging, with one or two tiers of small branches around it, and conidia are pushed out one after another from the conidiophores at the tip, forming a long string of conidia. The conidia come in a variety of colors, including green, black, yellow, brown, and white, and types are distinguished by their color, shape, and surface structure. It grows quickly and has a variety of enzymes and metabolic products, so it is widely used in the fermentation industry.

不完全菌類コウジカビ属菌類の総称。菌糸体はよく発達し，隔壁のある菌糸が生えひろがり，ところどころから分生子形成器官を支える分生子柄が直立する。その上部は丸くふくらみ，周囲に1段または2段の小枝をつくり，先端の分生子形成細胞から次々と分生子を押し出すように形成し，分生子が数珠状に長くつながる。分生子は緑色，黒色，黄色，褐色，白色などさまざまで，その色，形，表面構造などで種類が区別される。発育が速く，いろいろな酵素，代謝産物をもつので発酵工業に広く利用されている。
