When coagulation occurs in a hydrocolloid solution, the colloidal particles aggregate and separate from the liquid, but under certain conditions the colloidal particles do not separate completely, but instead maintain equilibrium with the liquid and separate into a colloid-rich layer and a colloid-poor layer. This phenomenon is called coacervation, with the colloid-rich layer being called the coacervate and the colloid-poor layer being called the equilibrium liquid. This phenomenon has been observed in substances found in biological cells, such as rubber, proteins, gelatin, and cellulose, and is therefore thought to have important biological significance.
