Cumin is one of the most popular spices, widely used in the Middle East, Southeast Asia, North Africa, America, and other parts of the world. It also has a long history as a medicinal plant, and in its native Egypt it has been used for thousands of years as a painkiller, gastrointestinal medicine, and as a preservative for mummies.
In medieval Europe, cumin was considered a symbol of chastity between men and women, and it was customary to carry cumin in one's pocket at wedding ceremonies.
Cumin mainly has the effects of promoting digestion, carminative (removing gas from the intestinal tract) , detoxifying, and relieving pain.Specific symptoms include indigestion, abdominal pain, diarrhea, abdominal distension, fever , and cold.
○How to use it as a food: Cumin has a unique, strong fragrance and a slight spiciness and bitterness.
It is one of the most important ingredients in curry powder, and is the base of the curry's distinctive aroma. When making curry, lightly fry the cumin before frying the onions to transfer the flavor to the oil, which will make the curry taste even more delicious.
It is also an essential ingredient in Mexican chili con carne and North African couscous dishes, and is an excellent flavouring for meat dishes, meat sauces, pickles and breads.
However, it does have a strong, peculiar scent, so be careful not to use too much.

クミンは中東、東南アジア、北アフリカ、アメリカなど、世界各地で多く用いられている、もっともポピュラーなスパイスの1つといえます。薬用植物としての歴史も古く、原産地のエジプトでは、数千年前から鎮痛剤、胃腸薬、ミイラの防腐剤などに利用されていました。
 また、中世ヨーロッパでは、男女間の貞節の象徴とされ、結婚式のとき、クミンをポケットへ忍ばせる風習があったといいます。
 クミンには主として、消化促進や駆風(くふう)(腸管内にたまったガスの排除)、解毒、鎮痛といった作用があります。具体的な症状としては、消化不良、腹痛、下痢(げり)、腹部膨満、発熱、かぜなどに効果を発揮します。
○食品としての使い方
 クミンには独特の強い芳香と、ほのかな辛みやにがみがあります。
 カレー粉のもっとも重要な構成材料の1つで、カレー特有の香りのベースはこのスパイス。カレーをつくるとき、タマネギなどを炒(いた)める前にクミンを軽く炒めて風味を油に移してやると、おいしさが一段とアップします。
 また、メキシコのチリコンカンや北アフリカのクスクス料理にも欠かせません。肉料理やミートソース、ピクルス、パンの風味付けにも好適です。
 ただ、独特の強い香りをもっているので、使いすぎに気をつけましょう。
