Kumys is a drink made from horse milk by nomads in Central Eurasia. In summer and autumn, horse milk is squeezed several times a day, placed in a leather bag or wooden barrel, and a small amount of old kumyz or yogurt is added, then stirred up and down with a ski pole-like stick. After being stirred thousands of times, it ferments, small bubbles appear, and a clear white kumyz with an alcohol content of 2-4% is produced. Kumys is rich in protein, fat, and vitamins, and some people spend the summer and autumn eating almost nothing but drinking kumyz. The Turkic peoples call it kumyz, while the Mongolians call it tsegee or airag.

馬乳酒のこと。中央ユーラシアの遊牧民が馬乳からつくる飲物。夏と秋に１日数回馬乳を絞り，革袋や木桶に入れて古いクミズやヨーグルトを少し加え，スキーのストックのような棒で上下にかくはんする。数千回もかくはんするうち，発酵して小さな泡が立ち，アルコール分２〜４％の透明がかった白色のクミズができあがる。タンパク質，脂肪，ビタミンなどが豊富で，クミズを飲む以外にほとんど何も食べずに夏と秋を過ごす人もいる。チュルク系民族がクミズというほか，モンゴル族はツェゲーとかアイラグという。
