[ I ] Coumarin. 2H -1-benzopyran-2-one . C9H6O2 (146.15). Lactone of o -hydroxycinnamic acid. Aromatic component found in clover and various other plants. It is synthesized by the Perkin reaction from salicylaldehyde, acetic anhydride, and sodium acetate. Colorless crystals. Melting point 68-70°C, boiling point 291°C. Soluble in ethanol and hot water. When diluted, its scent is reminiscent of sakura mochi leaves, and has a somewhat benzaldehyde-like scent. It is widely used in general cosmetics and food flavorings.
