Absinthe (France)

Liqueur made by steeping mugwort in alcohol along with several other herbs and spices, including anise, angelica, and fennel. Its alcohol content is 40-70%, and it is often diluted with sugar and water. It is pale yellow-green in color, and becomes cloudy when water is added. In the 18th century, French physician Pierre Ordinaire came up with a prescription for it as a medicinal liquor in Switzerland, and Henri Louis Pernot commercialized it in 1797. It became popular in France and other European countries, and is known to have been loved by many artists. However, it was discovered that the thujone contained in mugwort causes psychotropic effects, and the addictive nature of long-term habitual drinking became an issue. In the early 20th century, its production and sale were banned in various countries, and it became a legendary liquor. Subsequent research led to a review of the regulations, and in 1981 the WHO established the acceptable residual amount of thujone and approved the use of mugwort in liqueurs, and products within that range are currently being produced.

にがよもぎを主に、アニス、アンゼリカ、フェンネルなどの複数の香草、香辛料をアルコールに浸漬してつくるリキュール。アルコール度数は40~70度で、砂糖を加え、水で割って飲むことが多い。淡い黄緑色で、水を加えると白濁する。18世紀にフランス人の医師ピエール・オルディネールがスイスで薬酒として処方を考案し、1797年にアンリ・ルイ・ペルノが商品化した。フランスをはじめ欧米各国に普及し、多くの芸術家に愛好されたことでも知られるが、にがよもぎに含まれるツヨンが向精神作用を引き起こすことがわかり、長期にわたる習慣的な飲用による中毒性が問題となって、20世紀初頭各国であいついで製造・販売が禁止になり、幻の酒となっていた。その後の研究により規制が見直され、1981年WHOによりツヨンの残存許容量が定められたうえでリキュールににがよもぎを使用することが承認され、現在はその範囲内の製品が製造されている。
