Roasted sesame seeds are chopped on a chopping board to make cut sesame seeds, which are used in chazuke and other dishes. Sesame tofu is a typical item in shojin ryori (vegetarian cuisine), and is made by grinding white sesame seeds well, adding the same amount of kuzuko starch, and then grinding with about three times the amount of water and straining it in a water bag.
