Fried chicken

A type of processed tofu. Tofu is placed in a bag, thoroughly drained, and kneaded until sticky. Grated yam, carrots, other chopped vegetables, wood ear mushrooms, ginkgo nuts, sesame seeds, etc. are added, kneaded, rolled, and deep-fried. The name comes from its resemblance to goose meat. In the Kyoto-Osaka area, it is called hiryozu, hiryusu, or hirousu. The origin of the word hiryozu is the Portuguese word filhos, which is made by kneading milk, eggs, flour, butter, etc., rolling it into balls, and deep-frying it. The shape of Japanese ganmodoki is similar to this, so the name was borrowed from it. It is also thought that the characters "hiryuu head" and "hiryuu child" were used based on the pronunciation. It is rich in protein and fat. When using, it tastes better if you pour boiling water over it quickly to remove the oxidized oil. It is used as an ingredient in simmered dishes and oden.

豆腐の加工品の一種。豆腐を袋に入れて十分水をきり、粘りの出るまで練る。すりおろしたヤマノイモ、ニンジン、そのほか刻んだ野菜、キクラゲ、ぎんなん、ゴマなどを加えてこね合わせ、丸めて油で揚げたもの。ガンの肉に似せたところからついた名称。京阪地方ではひりょうず、ひりゅうす、ひろうすという。ひりょうずの語源はポルトガル語のフィリョースfilhosで、これは、牛乳、卵、小麦粉、バターなどをこねて丸め、油で揚げたものであるが、日本のがんもどきの形状がこれに似ていたのでその名前を借りたという。また、その発音から「飛竜頭」「飛竜子」などの字があてられたと考えられる。タンパク質、脂肪に富んでいる。使用の際は、熱湯をさっとかけ、酸化した油を落とす油抜きをすると味がよい。煮物、おでんの材料に使用される。
