By type of ingredient, vegetables are the most common, followed by fish and shellfish. Depending on the pickling bed or liquid, they can be divided into salt pickles, miso pickles, soy sauce pickles, vinegar pickles, lees pickles, koji pickles, mustard pickles, and rice bran pickles. Also, depending on the length of the pickling period, they can be broadly divided into immediate pickles and storage pickles.
