Mustard Vinegar Miso - Mustard Miso

...Miso soup is of course great for pickling vegetables, fish, or beef, and the miso pickles they use create a unique flavor and keep well. Sumiso, which is made by combining vinegar, or adding mustard or ginger to make karashi-sumiso or ginger-sumiso, are good for dressing squid, tuna, shellfish, green onions, udo, and wakame seaweed, while yuzu miso, kinome miso, and sesame miso, which are made by mixing yuzu, Japanese pepper, and sesame seeds, are used for tofu, taro, and konnyaku dengaku, for sweetfish and yamame fish dishes, and for steaming daikon and turnips. Miso is suitable for sardines, horse mackerel, and mackerel, and is used in hot pot dishes such as oyster dote nabe, clam hamanabe, wild boar botan nabe, and horse meat sakura nabe.
